  • 1 teaspoon baking powder

  • 1 cup (200g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups (150g) pecans, chopped
  • Sea salt flakes, for sprinkling (optional)
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the long sides, and grease lightly.
  2. Melt the butter in a medium saucepan over medium heat. Stir constantly until the foam subsides, the liquid turns deep amber, and it smells nutty/toasty (about 5-7 minutes). Immediately pour into a heatproof bowl to stop cooking and let cool for 10 minutes.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large bowl, whisk the cooled brown butter, granulated sugar, and brown sugar vigorously for 2 minutes until pale and fluffy.
  5. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  6. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix. Fold in the chopped pecans and chocolate chips (if using).
  7. Transfer dough to the prepared pan. Press evenly into the corners with a spatula or wet hands.
  8. Bake for 25-30 minutes until edges are golden brown and the center is set but slightly soft.
  9. Let bars cool in the pan on a wire rack for at least 30 minutes before lifting out and slicing into squares.
  10. Sprinkle with sea salt flakes if desired.

Notes

Brown butter goes from perfect to burnt quickly; watch it closely. Toasting pecans is optional but recommended for extra flavor. Ensure eggs are room temperature to prevent the brown butter from seizing. Bars must cool completely to set properly, otherwise they will crumble when sliced.
