- 1 cup almond flour
- 1/2 cup unsalted butter, melted
- 1/4 cup pistachios, toasted and chopped
- 2 tablespoons honey (for crust)
- 1/4 teaspoon salt
- 2 cups whole milk ricotta cheese
- 1/4 cup honey (for filling)
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 6–8 medium fresh figs, sliced in half lengthwise
- Extra honey for drizzling
- Edible flowers or mint for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch tart pan with removable bottom.
- In a medium bowl, mix melted butter, 2 tablespoons honey, and salt. Add almond flour and chopped pistachios; stir until mixture resembles wet sand.
- Press the crust mixture firmly into the bottom and up the sides of the tart pan. Bake for 10 minutes until lightly golden. Remove and let cool.
- While the crust cools, whisk ricotta cheese in a small bowl until smooth. Add egg yolks, vanilla extract, and 1/4 cup honey; whisk until creamy and well combined.
- Pour the ricotta filling into the pre-baked crust and smooth the top. Arrange sliced figs on top, cut-side up.
- Place the tart pan on a baking sheet and bake for 25-30 minutes until the filling is set and figs are caramelized.
- Cool in the pan for 10 minutes, then release from the pan. Cool completely on a wire rack.
- Drizzle with extra honey and garnish with mint or edible flowers before serving.
Notes
Drain the ricotta in a sieve for 15-30 minutes before using to prevent a watery tart. Toast pistachios in a dry pan for 3-4 minutes to enhance flavor. Ensure ricotta and eggs are at room temperature to prevent curdling. Do not overbake, or the filling may separate. This tart is best at room temperature but can be chilled.
