Description
Chewy, gooey fall blondies made with sourdough discard, maple syrup, and toasted pecans. This easy zero-waste dessert is perfect for using up starter without the stress of bread-making.

- 1 cup (240g) active sourdough discard
- 1/2 cup (113g) unsalted butter, melted and slightly cooled
- 1 cup (200g) light brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 3 tablespoons (45ml) real maple syrup
- 1 1/2 cups (190g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (100g) pecan pieces, toasted
- Flaky sea salt, for topping
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
- In a medium bowl, whisk together the melted butter, light brown sugar, granulated sugar, egg, vanilla extract, and maple syrup until glossy and smooth.
- Stir in the sourdough discard until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture using a spatula until just combined and no streaks of flour remain.
- Fold in the toasted pecans.
- Pour batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes, until edges are golden brown and the center is slightly soft/jiggly. A toothpick should come out with moist crumbs.
- Immediately sprinkle flaky sea salt over the top while hot.
- Cool completely in the pan (at least 30 minutes, ideally overnight) before cutting into 16 squares.
Notes
Do not skip the cooling time; the blondies are fragile when hot and need time to set. Toasting pecans enhances flavor significantly. Use real maple syrup, not pancake syrup. These improve in texture after sitting for a day. Store in an airtight container at room temperature for up to 5 days.
