  • Yield: 8 servings 1x

Description

A no-bake, light, and airy pumpkin mousse dessert flavored with maple and warm spices, topped with a crunchy gingersnap crumble. Perfect for Thanksgiving or any fall gathering.

Ingredients

Scale
  • 2 cups heavy whipping cream, cold
  • 15 ounces canned pumpkin puree (not pie filling)
  • 4 ounces cream cheese, softened to room temperature
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup gingersnap cookies
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar (optional)
  • Pinch of cinnamon

Instructions

  1. Drain the canned pumpkin puree in a fine-mesh strainer or on paper towels for 10 minutes to remove excess moisture, then transfer to a medium bowl.
  2. Whisk the softened cream cheese, maple syrup, vanilla extract, pumpkin pie spice, and salt into the drained pumpkin until smooth and lump-free.
  3. In a chilled large bowl, whip the cold heavy cream on medium-high speed until stiff peaks form (about 2-3 minutes).
  4. Gently fold the whipped cream into the pumpkin mixture using a spatula until just combined, being careful not to deflate the cream.
  5. Crush the gingersnap cookies into coarse crumbs using a rolling pin or food processor.
  6. Mix the cookie crumbs with melted butter and sugar (if using) until the texture resembles wet sand.
  7. Layer the mousse and gingersnap crumble in serving glasses or jars, finishing with a sprinkle of crumbs.
  8. Refrigerate for at least 2 hours, or preferably overnight, to allow the mousse to set and flavors to meld.

Notes

Ensure the pumpkin is thoroughly drained to prevent a runny mousse. Keep the cream and bowl very cold for best whipping results. Do not over-fold the cream to maintain a light texture. For extra flavor, the gingersnap crumble can be toasted at 350°F for 5 minutes before mixing with butter.
