Autumn Pumpkin Baked Oatmeal: 5-Ingredient Family Breakfast

  • Author: Elena
  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Description

A cozy, make-ahead breakfast that tastes like a cross between pumpkin pie and a cinnamon roll. This baked oatmeal is packed with fiber and protein, featuring a sticky-sweet pecan topping and a custard-like texture.

Ingredients

Scale
  • 3 cups old-fashioned rolled oats
  • 1 cup pure pumpkin puree
  • 1 ½ cups milk (whole, oat, or dairy-free)
  • 2 large eggs
  • ¼ cup real maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chopped pecans
  • 2 tablespoons melted butter (for topping)
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Toast chopped pecans in a skillet over medium heat for 2-3 minutes until fragrant, then set aside.
  3. In a large mixing bowl, whisk together milk, eggs, maple syrup, and melted butter until smooth.
  4. Add oats, pumpkin puree, pumpkin pie spice, baking powder, and salt to the wet mixture. Stir until well combined.
  5. Let the mixture rest in the bowl for 5 minutes to allow oats to absorb liquid.
  6. In a small bowl, mix toasted pecans, brown sugar, cinnamon, and remaining melted butter to create the topping.
  7. Pour oat mixture into the prepared baking dish and spread evenly. Sprinkle pecan topping over the top.
  8. Bake for 35-40 minutes until the top is golden brown and the center is set. Tent with foil if browning too quickly.
  9. Let cool for at least 10 minutes before slicing to allow it to firm up.

Notes

Do not use quick oats or steel-cut oats as they will alter the texture. Ensure you use pure pumpkin puree, not pumpkin pie filling. Toasting the pecans is highly recommended for flavor. Let the oatmeal cool completely before cutting to ensure it slices cleanly.
