Description
A rich, spiced, and creamy 5-minute morning smoothie that combines pumpkin puree, chai spices, and toasted pecan butter for a satisfying, high-protein breakfast that fuels you until lunch.
Ingredients
Scale
- 1/2 cup (120g) pure pumpkin puree
- 1 cup (240ml) unsweetened almond milk
- 1 scoop (30g) vanilla protein powder
- 1 tablespoon (15g) toasted pecan butter
- 1 teaspoon chai spice blend (cinnamon, ginger, cardamom, cloves)
- 1 teaspoon maple syrup (optional)
- 1/2 cup ice cubes
- 1/2 teaspoon instant coffee (optional)
- 1 tablespoon ground flaxseed (optional)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Measure out the pumpkin, protein powder, spices, and ice cubes.
- If making your own pecan butter, toast pecans in a skillet for 2-3 minutes until fragrant, cool, and blend until smooth. If using store-bought butter, skip this step.
- Add almond milk, pumpkin puree, protein powder, chai spices, maple syrup, and pecan butter to a blender.
- Blend on low speed to mix powders and liquids, then increase to high and blend for 30-45 seconds until smooth.
- Add ice cubes and blend on high for another 30 seconds until thick and slushy.
- Taste and adjust sweetness or spice levels if desired.
- Pour into a travel mug and serve immediately.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. For a warmer smoothie, use warm almond milk and skip the ice. The smoothie is best consumed fresh; if stored, shake well before drinking as it may separate.
