  • 1 cup (240ml) heavy whipping cream, cold
  • ½ cup (120ml) strong brewed espresso or coffee, cooled completely
  • 1 teaspoon vanilla extract
  • 3 tablespoons granulated sugar
  • ½ cup (120g) 100% pure pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1.5 cups vanilla wafers or ladyfingers, crumbled
  • Whipped cream, for topping (optional)
  • Extra pumpkin spice, for dusting (optional)

Instructions

  1. Brew espresso or strong coffee and let it cool completely to room temperature.
  2. In a large mixing bowl, whip the cold heavy cream using an electric mixer on medium-high speed until soft peaks form. Set aside.
  3. In a separate bowl, combine the cold mascarpone, cooled coffee, vanilla extract, sugar, pumpkin puree, pumpkin pie spice, and cinnamon. Blend or whisk vigorously until the mixture is smooth and uniform.
  4. Add about one-third of the whipped cream to the mascarpone mixture and whisk gently to lighten the base.
  5. Add the remaining whipped cream and gently fold it in using a spatula with a figure-eight motion until just combined. Do not over-mix.
  6. Crumble vanilla wafers or ladyfingers into small, pea-sized pieces.
  7. In serving glasses or mason jars, layer 1 tablespoon of cookie crumble followed by ¼ cup of the mascarpone cream. Repeat for a second layer.
  8. Refrigerate the cups for at least 20 minutes to allow flavors to meld and crumbs to soften.
  9. Top with a dollop of fresh whipped cream and a dusting of pumpkin spice before serving.

Notes

Keep all dairy ingredients cold to ensure proper whipping. Do not use hot coffee as it will melt the cream. For a gluten-free version, use gluten-free cookies. For a dairy-free version, substitute mascarpone with dairy-free cream cheese and heavy cream with coconut cream. Best served chilled; do not freeze.
