  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (90g, optional)
  • 1/2 cup chopped walnuts or pecans (60g, optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel and mash the ripe bananas in a large bowl until smooth with some chunks remaining.
  3. Add peanut butter, honey, and vanilla extract to the mashed bananas and stir until smooth and combined.
  4. Sprinkle in baking powder, cinnamon, salt, and oats. Stir gently until evenly mixed.
  5. Fold in chocolate chips and nuts if using.
  6. Drop tablespoon-sized dollops of dough onto a parchment-lined baking sheet, flatten slightly, and leave about 2 inches between cookies.
  7. Bake for 12 to 15 minutes until edges are golden and centers are set but soft.
  8. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Use fully ripe bananas with brown spots for best sweetness and moisture. Old-fashioned rolled oats provide the best chewy texture. Watch baking time carefully to avoid dry cookies.
