  • 1 large egg
  • 2 tablespoons vegetable oil or melted butter
  • 8 regular or mini hot dogs, sliced into 1-inch bite-size pieces
  • ½ cup shredded cheddar cheese (optional, 50g)
  • Optional: ¼ teaspoon smoked paprika or a pinch of cayenne for heat

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin well.
  2. Slice hot dogs into 1-inch bite-size pieces and shred cheese if using.
  3. In a large bowl, whisk together flour, cornmeal, baking powder, sugar, and salt until combined.
  4. In a separate bowl, beat the egg lightly, then add buttermilk and vegetable oil. Whisk until smooth.
  5. Pour wet ingredients into dry ingredients and stir gently just until combined; do not overmix.
  6. Fill each mini muffin cup about one-third full with batter, place a piece of hot dog (and cheese if using) in the center, then cover with more batter until about ¾ full.
  7. Bake for 12-15 minutes until tops are golden and a toothpick inserted into the batter comes out clean.
  8. Let muffins cool in the tin for a few minutes before removing carefully.
