A quick, wholesome, and fun homemade strawberry yogurt bark perfect for back-to-school snacks. It’s sweet, fruity, and packed with protein, making it a healthy treat kids love.
Ingredients
- 2 cups (475 ml) Greek yogurt, plain or vanilla, full-fat preferred
- 1 cup (about 150 g) fresh strawberries, sliced
- 2 tablespoons (30 ml) honey
- 1 tablespoon chia seeds (optional)
- 2 tablespoons (15 g) slivered almonds
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until smooth and fully blended.
- Wash and slice the strawberries into thin pieces about 1/4-inch thick. Pat them dry with a paper towel.
- Line a baking sheet with parchment paper. Spread the yogurt mixture evenly over the sheet to about a 1/4-inch thickness.
- Sprinkle the sliced strawberries evenly over the yogurt. Scatter chia seeds and slivered almonds on top and press them in lightly.
- Place the tray in the freezer and freeze until completely solid, about 3 to 4 hours or overnight.
- Remove the bark from the tray by lifting the parchment paper. Place on a cutting board and cut into small squares or rectangles.
- Store the pieces in an airtight container or zip-top bag in the freezer or fridge.
- Pack a few pieces into a lunchbox or snack container and enjoy chilled or slightly thawed.
