- 8 oz (225g) cream cheese, softened
- 1 lb (450g) deli turkey breast slices
- 2 cups (200g) shredded sharp cheddar cheese
- 2 cups fresh spinach, packed
- 1/2 cup sun-dried tomatoes, chopped and drained
- Optional: 1/2 cup cucumber, thinly sliced
- Optional: 2 tablespoons ranch dressing
- Optional: 1/4 cup bacon bits
Instructions
- Prep ingredients: Shred cheese, chop sun-dried tomatoes, and wash/dry spinach. If using cucumbers, slice thin and pat dry.
- Lay tortillas flat on a large cutting board. If stiff, microwave for 10-15 seconds to soften. Leave a 1-inch border at the top edge.
- Spread a thin, even layer of softened cream cheese over each tortilla, leaving the 1-inch border clean.
- Sprinkle shredded cheddar cheese evenly over the cream cheese. Layer turkey slices (folded if necessary), spinach, and sun-dried tomatoes on top.
- Starting from the bottom edge, roll the tortilla up tightly, tucking in the filling. Press the clean border to seal the roll.
- Wrap each log tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes (preferably 1 hour) to firm up.
- Unwrap logs and slice into 1-inch thick rounds using a sharp serrated knife. Serve cold or at room temperature.
Notes
Ensure tortillas are soft before rolling to prevent cracking. Drain sun-dried tomatoes well to avoid soggy pinwheels. Chilling is essential for clean slicing. Can be frozen for up to 1 month.
