Instructions

  1. Brown the butter: Melt butter in a heavy-bottomed saucepan over medium heat. Stir constantly until it foams, then crackles, and finally settles with a nutty aroma and amber color with dark specks. Remove from heat and pour into a heat-proof bowl to cool for 10-15 minutes.
  2. Mix wet ingredients: In a stand mixer with paddle attachment, beat the cooled brown butter, brown sugar, and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy. Scrape down sides. Add eggs and egg yolk one at a time, beating well after each. Mix in vanilla extract.
  3. Combine dry ingredients: In a separate medium bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Make the dough: With mixer on low, gradually add dry ingredients to wet ingredients. Mix just until combined; do not overmix. The dough will be thick and sticky.
  5. Fold in mix-ins: Gently fold in toffee bits and white chocolate chips using a spatula or hands until evenly distributed.
  6. Chill the dough: Cover the bowl and refrigerate for at least 30 minutes (or up to 24 hours) to solidify the fat and prevent excessive spreading.
