Description
A safe, no-bake edible cookie dough recipe made with oat flour and almond flour that takes just five minutes to prepare. These dense, chewy bites are rolled in mini chocolate chips for a treat that satisfies cravings without raw eggs.
Ingredients
- 1 cup (80g) Old-Fashioned Rolled Oats
- 1/2 cup (50g) Almond Flour
- 1/4 cup (56g) Butter, softened
- 1/2 cup (100g) Light Brown Sugar, packed
- 2–3 tablespoons Heavy Cream
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Salt
- 1/2 cup (85g) Mini Chocolate Chips (semi-sweet)
- Flakey Sea Salt (optional, for topping)
Instructions
- Pour rolled oats into a food processor and pulse 10-15 times until they resemble coarse sand or flour.
- Transfer the oat flour to a mixing bowl and add the almond flour and salt; stir to combine.
- Add the softened butter and brown sugar to the bowl and mix vigorously until the mixture resembles wet sand and lumps are broken down.
- Stir in the vanilla extract and 2 tablespoons of heavy cream. Mix until the dough starts to clump together. Add more cream if too dry, or more almond flour if too sticky.
- Line a baking sheet with parchment paper. Take about a tablespoon of dough and roll it into a ball between your palms.
- Drop the dough ball into the bowl of mini chocolate chips and gently roll until fully coated. Place on the baking sheet.
- Repeat with the remaining dough, keeping bites uniform in size.
- Chill the baking sheet in the refrigerator for at least 10 minutes to firm up the butter and set the bites.
Notes
Ensure butter is softened, not melted, to maintain proper texture. If dough is too sticky, add more almond flour. If it falls apart, add more cream. For a nut-free version, substitute almond flour with oat flour or sunflower seed flour. For dairy-free, use vegan butter and dairy-free chocolate chips. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
