Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 cup wild rice blend (dry)
  • 6 cups low-sodium chicken broth
  • 3 cups cooked chicken, shredded or diced
  • 1 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 2 bay leaves
  • Salt and black pepper to taste
  • Optional: Green onions, fresh parsley, mushrooms, or frozen peas

Instructions

  1. Dice the onion, carrots, and celery, and mince the garlic. Set aside.
  2. In a large pot or Dutch oven, melt the butter over medium heat.
  3. Add the onion, carrots, and celery. Cook for 5-7 minutes until softened and onions are translucent.
  4. Add the garlic and thyme, cooking for 1 minute until fragrant.
  5. Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  6. Slowly pour in the chicken broth while whisking constantly to prevent lumps.
  7. Add the wild rice blend and bay leaves. Stir to combine.
  8. Bring to a boil, then reduce heat to low. Cover and simmer for 40-45 minutes until rice is tender.
  9. Stir in the cooked chicken and let heat through for 2-3 minutes.
  10. Remove bay leaves. Stir in the heavy cream.
  11. Taste and adjust salt and pepper as needed. If too thick, add more broth; if too thin, simmer uncovered.
  12. Ladle into bowls and garnish with fresh parsley, green onions, or black pepper. Serve immediately.

Notes

Use a rice blend with brown or white rice for faster cooking. Shredded chicken distributes better than diced. The soup thickens in the fridge; thin with broth when reheating. Freezes well for up to 3 months.
