A comforting, creamy chicken and wild rice soup that is perfect for fall. This easy weeknight meal uses leftover rotisserie chicken and pantry staples for a hearty, velvety texture that the whole family will love.

- 3 tablespoons unsalted butter
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 cup wild rice blend (dry)
- 6 cups low-sodium chicken broth
- 3 cups cooked chicken, shredded or diced
- 1 cup heavy cream
- 3 tablespoons all-purpose flour
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 2 bay leaves
- Salt and black pepper to taste
- Optional: Green onions, fresh parsley, mushrooms, or frozen peas
Instructions
- Dice the onion, carrots, and celery, and mince the garlic. Set aside.
- In a large pot or Dutch oven, melt the butter over medium heat.
- Add the onion, carrots, and celery. Cook for 5-7 minutes until softened and onions are translucent.
- Add the garlic and thyme, cooking for 1 minute until fragrant.
- Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
- Slowly pour in the chicken broth while whisking constantly to prevent lumps.
- Add the wild rice blend and bay leaves. Stir to combine.
- Bring to a boil, then reduce heat to low. Cover and simmer for 40-45 minutes until rice is tender.
- Stir in the cooked chicken and let heat through for 2-3 minutes.
- Remove bay leaves. Stir in the heavy cream.
- Taste and adjust salt and pepper as needed. If too thick, add more broth; if too thin, simmer uncovered.
- Ladle into bowls and garnish with fresh parsley, green onions, or black pepper. Serve immediately.
Notes
Use a rice blend with brown or white rice for faster cooking. Shredded chicken distributes better than diced. The soup thickens in the fridge; thin with broth when reheating. Freezes well for up to 3 months.
