  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt (or to taste)
  • Black pepper (to taste)
  • 2 heads romaine lettuce, chopped (about 8 cups)
  • 2 cups shredded rotisserie chicken (about 300g)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup croutons

Instructions

  1. Chop the romaine lettuce into bite-sized pieces and ensure it is completely dry. Shred the chicken, mince the garlic, and grate the Parmesan cheese.
  2. In a food processor or blender, combine the avocado flesh, lemon juice, minced garlic, Dijon mustard, olive oil, salt, and pepper.
  3. Blend the mixture until completely smooth, scraping down the sides as needed. If the dressing is too thick, add water one teaspoon at a time until pourable.
  4. In a large mixing bowl, combine the chopped romaine lettuce and shredded chicken.
  5. Drizzle about half of the avocado dressing over the salad and toss gently until the leaves are evenly coated. Add more dressing if desired.
  6. Transfer the salad to serving plates or bowls.
  7. Sprinkle generously with freshly grated Parmesan cheese and top with croutons.
  8. Serve immediately for best texture and flavor.

Notes

Use ripe avocados for the best texture. Freshly grate the Parmesan cheese for better melting and flavor. The dressing can be made up to 24 hours in advance; store with plastic wrap pressed directly onto the surface to prevent browning. Do not freeze this salad as the avocado and lettuce do not freeze well. For a vegetarian version, substitute chicken with chickpeas.
