Description
A dairy-free, gluten-free summer party drink that mimics the classic piña colada without alcohol. This creamy, tropical mocktail is ready in 5 minutes and uses full-fat coconut milk and frozen pineapple for a rich, velvety texture.
Ingredients
- 2 cans (13.5 oz / 380ml each) full-fat coconut milk
- 3 cups (450g) frozen pineapple chunks
- 2 tablespoons (30ml) fresh lime juice
- 2–4 tablespoons (30-60ml) simple syrup, honey, or agave nectar
- 1 small bunch fresh mint leaves
- Pineapple wedges for garnish
- Extra lime wheels for garnish
- Toasted coconut flakes for rimming (optional)
Instructions
- Roll limes on the counter to soften, then cut in half and juice.
- Add frozen pineapple chunks, full-fat coconut milk, and fresh lime juice to a high-speed blender.
- Blend on low to break up fruit, then increase to high and blend for 45-60 seconds until smooth and creamy.
- Taste the mixture and add sweetener (simple syrup, honey, or agave) starting with 2 tablespoons. Blend for 10 seconds to incorporate, adjusting to taste.
- If desired, moisten glass rims with lime and dip in toasted coconut flakes.
- Pour the mocktail into tall glasses over ice if desired.
- Garnish with fresh mint sprigs and pineapple wedges. Serve immediately.
Notes
Shake coconut milk cans well before opening to mix the cream and water. If using fresh pineapple, freeze chunks for at least 4 hours. For a thicker drink, use more frozen pineapple; for a thinner drink, add coconut water or regular water. Store leftovers in an airtight container in the fridge for up to 2 days, shaking well before serving as separation is natural.
