  • 1.5 pounds boneless, skinless chicken breasts
  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup sun-dried tomatoes (packed in oil), chopped and drained
  • 1 tablespoon oil from sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 2 cups fresh spinach
  • Optional: 1/4 cup white wine

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. Pound to an even 1/2-inch thickness.
  2. Heat butter in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic and red pepper flakes to the pan, cooking for 1 minute until fragrant but not brown.
  4. Add chopped sun-dried tomatoes and cook for 1 minute to release oils.
  5. Pour in chicken broth, scraping up browned bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
  6. Add heavy cream and Italian seasoning. Stir and simmer for 2-3 minutes until the sauce thickens slightly.
  7. Remove skillet from heat. Gradually stir in Parmesan cheese until melted and smooth.
  8. Return chicken to the pan, spooning sauce over it. Simmer gently for 1-2 minutes to warm through.
  9. Serve immediately with extra Parmesan, black pepper, and optional fresh basil.

Notes

Use fresh garlic and freshly grated Parmesan for the best texture and flavor. Do not add cheese while the pan is on high heat to prevent graininess. If the sauce is too thick, add a splash of pasta water or broth. For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
