- 9–12 oz (250-340g) refrigerated cheese tortellini
- ½ cup (70g) sun-dried tomatoes packed in oil, chopped
- 4 oz (115g) cream cheese, softened
- 1 ½ cups (360ml) chicken broth (or vegetable broth)
- ½ cup (120ml) heavy cream (optional)
- 3–4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes
- Salt and black pepper to taste
- 1 tablespoon oil from sun-dried tomato jar (or olive oil)
- Optional: 2 cups fresh spinach
- Optional: 1 cup diced grilled chicken
- Optional: ¼ cup grated Parmesan cheese
Instructions
- Prep ingredients: Mince garlic, chop sun-dried tomatoes, and ensure cream cheese is softened.
- Heat a large skillet over medium heat and add 1 tablespoon of oil from the sun-dried tomato jar.
- Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant but not browned.
- Add chopped sun-dried tomatoes and stir for 30 seconds.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer.
- Add tortellini to the simmering broth. Stir to submerge, cover with a lid, and cook for 5-7 minutes or until pasta is al dente, stirring halfway through.
- Remove skillet from heat and let cool for 30 seconds.
- Add softened cream cheese and heavy cream (if using). Whisk or stir vigorously until the sauce is smooth and creamy.
- Stir in Italian seasoning and taste for seasoning, adding salt and pepper as needed.
- If using spinach, toss it in now and let it wilt for 30 seconds.
- Serve immediately, topped with Parmesan cheese and fresh basil if desired.
Notes
Use refrigerated tortellini for the best texture. Ensure cream cheese is softened to room temperature to prevent lumps. If the sauce becomes too thick, thin it with a splash of broth or milk. Do not freeze this dish as the dairy sauce may separate.
