Ingredients
- 2 large English cucumbers, diced (about 400g)
- 1 pint cherry or grape tomatoes, halved (about 300g)
- 6 ounces feta cheese, crumbled (about 170g)
- 1 small red onion, finely diced (about 50g)
- 2 tablespoons fresh dill, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Wash cucumbers and tomatoes. Dice cucumbers into half-inch chunks and halve the tomatoes. Finely dice the red onion. Place all vegetables in a large mixing bowl.
- In a small bowl or jar, combine olive oil, lemon juice, red wine vinegar, honey, Dijon mustard, salt, and black pepper. Whisk or shake vigorously until emulsified.
- Pour the dressing over the vegetables. Add the crumbled feta and chopped dill.
- Gently toss everything together until vegetables are evenly coated, being careful not to break the tomatoes.
- Let the salad sit for 10-15 minutes to allow flavors to meld (optional but recommended).
- Serve immediately as a side dish or main course.
Notes
If using regular cucumbers, peel them and scoop out the seeds to prevent a watery salad. For less watery results, you can salt the diced cucumbers and let them sit for 10 minutes before rinsing and patting dry. Do not freeze this salad as cucumbers will turn mushy. Store in an airtight container in the refrigerator for up to 2 days.
