Crispy Hash Brown Breakfast Casserole

  • Author: Elena
  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Description

A simple, budget-friendly weeknight dinner made with frozen hash browns, eggs, and cheese. This casserole offers a crispy crust and soft, cheesy interior, ready in under 45 minutes.

Ingredients

Scale
  • 30 ounces frozen shredded hash browns
  • 6 large eggs
  • 1/2 cup milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, finely diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1 cup cooked bacon or sausage, crumbled
  • Optional: 2 stalks green onions, sliced
  • Optional: Hot sauce to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Thaw frozen hash browns and squeeze out excess moisture using a clean kitchen towel or paper towels.
  3. In a large mixing bowl, whisk together eggs, milk, salt, and pepper until uniform.
  4. Spread half of the dried hash browns into the bottom of the baking dish.
  5. Sprinkle half of the diced onion and half of the shredded cheese over the hash browns.
  6. Pour half of the egg mixture over the layer and spread gently.
  7. Repeat layers with remaining hash browns, onion, cheese, and egg mixture, ending with hash browns on top.
  8. Bake for 30-35 minutes until the top is golden brown and the center is set.
  9. Let the casserole rest for 10 minutes before slicing and serving.

Notes

Ensure hash browns are thoroughly dried to prevent a soggy casserole. Let the dish rest for 10 minutes after baking to allow eggs to set for clean slicing. Pre-shredded cheese contains anti-caking agents that prevent smooth melting, so grate cheese from a block for best results.
