  • 2 pounds beef chuck roast, trimmed and sliced against the grain into ¼-inch strips
  • 34 cups fresh broccoli florets
  • 68 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ½ cup soy sauce (low-sodium recommended)
  • ½ cup beef broth (low-sodium recommended)
  • 2 tablespoons dark brown sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame oil

Instructions

  1. Trim the chuck roast of large hard fat pieces and slice the beef against the grain into thin strips. Place in a large bowl.
  2. In a medium bowl, whisk together soy sauce, beef broth, brown sugar, rice vinegar, red pepper flakes, and sesame oil until sugar is dissolved.
  3. Pour the sauce over the beef in a 6-quart slow cooker. Toss to coat evenly. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until beef is fork-tender.
  4. About 30 minutes before the end of cooking, add the broccoli florets to the pot. Stir into the beef and sauce. Cover and cook on HIGH for the last 30 minutes until broccoli is tender-crisp.
  5. While broccoli cooks, whisk cornstarch with cold water to make a slurry. Pour slurry into the slow cooker while stirring gently. Cover and cook on HIGH for another 10-15 minutes until sauce is thick and glossy.
  6. Taste and adjust seasoning if needed. Serve immediately over steamed white or brown rice, garnished with green onions and sesame seeds if desired.

Notes

Slice beef against the grain for tenderness. Do not add broccoli at the beginning or it will turn to mush. Thicken the sauce at the end using a cornstarch slurry. For a spicy version, add sriracha or extra red pepper flakes. This recipe is naturally dairy-free. Use tamari for a gluten-free version.
