Description

  • 34 pounds chuck roast
  • 2 tablespoons all-purpose flour
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth (low-sodium recommended)
  • 1 packet (1.75 oz) brown gravy mix
  • 1 tablespoon soy sauce
  • 4 large carrots, chopped into 2-inch pieces
  • 1.5 pounds potatoes (Russet or Yukon Gold), cut into 1.5-inch chunks
  • Salt and pepper to taste

Instructions

  1. Pat the chuck roast dry with paper towels and place it in a large bowl.
  2. Sprinkle the flour, salt, and pepper over the roast and toss until evenly coated with a light dusting.
  3. Place the chopped onions, carrots, and potatoes into the bottom of a 6-quart slow cooker.
  4. Place the flour-coated roast on top of the vegetables.
  5. In a small bowl, whisk together the beef broth, soy sauce, and dry gravy mix until smooth.
  6. Pour the sauce mixture over the roast and vegetables.
  7. Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours) until the meat is fork-tender.
  8. Remove the roast and vegetables to a serving platter.
  9. Optional: For thicker gravy, stir a slurry of 1 tablespoon cornstarch and 1 tablespoon cold water into the liquid in the crockpot and cook on HIGH for 15-20 minutes.
  10. Slice or shred the meat, pour gravy over the top, and serve.

Notes

Do not skip coating the meat in flour as it helps thicken the gravy. Cut vegetables uniformly to ensure even cooking. Avoid lifting the lid during cooking to maintain temperature. For a gluten-free version, use gluten-free flour and gravy mix. Potatoes may become grainy if frozen and reheated.
