- 4 medium Bosc or Anjou pears (about 1.5 lbs / 700g), cored and cut into ½-inch cubes
- 1 cup fresh cranberries (120g)
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar

- 1 teaspoon ground cinnamon
- Pinch of salt
- 1 cup old-fashioned rolled oats (90g)
- ½ cup all-purpose flour (60g)
- ½ cup packed brown sugar (100g)
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- 6 tablespoons unsalted butter (85g), cold and cubed
- ½ cup pecan halves (60g), chopped
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9 inch baking dish with butter or non-stick spray.
- In a large bowl, toss pear cubes with lemon juice. Add cranberries, granulated sugar, cornstarch, 1 teaspoon cinnamon, and a pinch of salt. Toss until pears are evenly coated.
- In a medium bowl, combine oats, flour, brown sugar, ½ teaspoon cinnamon, ginger, and ¼ teaspoon salt.
- Add cold, cubed butter to the dry ingredients. Use a fork or fingers to cut butter into the mixture until it resembles coarse crumbs with pea-sized butter chunks.
- Stir in chopped pecans.
- Pour the fruit mixture into the prepared baking dish and spread evenly. Sprinkle the streusel topping loosely over the fruit. Do not press down.
- Bake for 40-45 minutes, or until the topping is golden brown and the fruit juices are bubbling and thick.
- If the topping browns too quickly, tent with aluminum foil after 30 minutes.
- Remove from oven and let cool for at least 15 minutes to allow the filling to thicken before serving.
Notes
Do not skip the lemon juice as it prevents browning and adds brightness. Ensure butter is cold for a crunchy topping. Let the crisp cool for 15 minutes to allow the filling to set. Can be stored in the refrigerator for up to 4 days or frozen unbaked for up to 3 months.
