Description
A creamy, spiced, and affordable homemade cold brew coffee that tastes like a café pumpkin spice latte but costs pennies to make. This recipe uses simple pantry ingredients and can be prepared in advance for easy weekday mornings.

- 1 cup coarse coffee grounds (dark roast preferred)
- 4 cups cold filtered water
- 2 tablespoons pumpkin puree (100% pure, not pie filling)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/2 teaspoon vanilla extract
- 1/2 cup milk or oat milk
- 1–2 teaspoons maple syrup (or honey/brown sugar)

Instructions
- Combine 1 cup of coarse coffee grounds and 4 cups of cold water in a large jar or pitcher. Stir gently to ensure all grounds are saturated.
- Cover the jar and refrigerate for 12-24 hours (18 hours is ideal) to steep.
- Strain the coffee through a cheesecloth, nut milk bag, or fine-mesh strainer into a clean pitcher. Do not squeeze the bag to avoid bitterness.
- Store the plain cold brew concentrate in the fridge for up to 2 weeks.
- To serve, mix 2 tablespoons pumpkin puree, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon ginger, and 1/2 teaspoon vanilla extract in a small bowl to form a smooth paste.
- Fill a glass with ice and pour in 1 cup of cold brew base.
- Add the pumpkin spice paste to the coffee and whisk vigorously until fully dissolved and the drink is a uniform color.
- Stir in 1/2 cup milk (or oat milk) and 1-2 teaspoons of maple syrup.
- Top with whipped cream and a dusting of cinnamon if desired. Serve immediately.
Notes
Use coarse grind coffee to prevent bitterness and muddy texture. Always create a spice paste with the pumpkin puree first to prevent clumping. The cold brew base can be stored for up to 2 weeks. Do not freeze the mixed drink with pumpkin puree as it will separate.
