  • 1 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)
  • Pinch of salt (for coating)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce to medium-low. Simmer gently for 20-30 minutes until reduced by half (to 1 cup). Let cool completely.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
  3. In a separate bowl, whisk the melted butter, ½ cup granulated sugar, egg, vanilla, and the cooled reduced apple cider until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a rubber spatula until just combined. Do not overmix; the batter should be thick and lumpy.
  5. Pour about 2 inches of oil into a heavy-bottomed pot or Dutch oven. Heat over medium heat until it reaches 350°F (175°C).
  6. Gently drop 2-3 spoonfuls of batter into the hot oil. Fry for 1-2 minutes per side until golden brown. Do not overcrowd the pot.
  7. Remove donuts with a slotted spoon and drain on a wire rack for 1-2 minutes.
  8. While donuts are still warm, toss them in a mixture of 1 cup sugar, 2 teaspoons cinnamon, and a pinch of salt until fully coated.
  9. Serve immediately or store in an airtight container.
