  • 1 ½ cups (300g) sugar (mix of white and brown)

  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • ½ cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and sugars together until light and fluffy (about 3 minutes with an electric mixer).
  3. Add the pumpkin puree, eggs, and vanilla extract to the butter mixture. Beat on medium speed until fully combined.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Mix the granulated sugar and cinnamon in a small bowl or mug. Scoop tablespoon-sized balls of dough and roll them in the cinnamon sugar mixture until fully coated.
  7. Place dough balls on prepared baking sheets, leaving about 2 inches between each.
  8. Bake for 10-12 minutes until edges are set but centers still look slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use plain pumpkin puree, not pumpkin pie filling. Ensure butter is softened, not melted. Spoon and level flour to avoid dry cookies. Store in an airtight container with a slice of bread to keep soft.
