  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 ½ cups chocolate chips
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, and ground cinnamon. Set aside.
  3. In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until combined. Add the pumpkin puree and mix until the batter is smooth.
  5. Gradually add the dry ingredients to the wet ingredients. Mix on low speed or stir with a wooden spoon until just combined. Do not overmix.
  6. Stir in the chocolate chips (and nuts, if using). Spread the batter evenly into the prepared pan.
  7. Bake for 25-30 minutes, or until the edges are golden brown and the center is set but slightly jiggly.
  8. Let the bars cool in the pan for at least 20 minutes, then transfer to a cooling rack to cool completely.
  9. Cut into 24 squares and serve.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Ensure butter is softened but not melted. Do not overmix the batter to avoid tough bars. Cool completely before cutting for clean slices. Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days.
