These slow cooker buffalo chicken sliders are the ultimate game day comfort food. Tender, spicy chicken is shredded and piled onto sweet Hawaiian rolls with melted cheddar and blue cheese drizzle, making a budget-friendly, crowd-pleasing meal that requires minimal effort.
Ingredients
- 2 pounds boneless, skinless chicken breasts (can be frozen)
- 1 cup hot sauce (such as Frank’s RedHot)
- 1/2 cup unsalted butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 12–24 Hawaiian sweet rolls
- 2 cups shredded cheddar cheese
- 1/2 cup blue cheese dressing (or ranch dressing)
- Optional: Diced celery and carrots for serving
Instructions
- Place chicken breasts in the bottom of a 6-quart slow cooker. If breasts are large, cut them in half for even cooking.
- In a microwave-safe bowl, melt the butter. Whisk in the hot sauce, garlic powder, and Worcestershire sauce until smooth.
- Pour the buffalo sauce mixture over the chicken in the slow cooker, ensuring the chicken is well coated.
- Cover and cook on low for 4-6 hours (or 6-7 hours if using frozen chicken). The chicken is done when it is fork-tender and shreds easily.
- Remove chicken from the slow cooker and place in a large bowl. Discard excess liquid if too watery, or reserve some for moisture.
- Shred the chicken using two forks or a hand mixer on low speed for 30 seconds. Mix the shredded chicken back into the slow cooker with the remaining sauce and let sit for 10 minutes to absorb flavor.
- Slice the Hawaiian rolls in half horizontally to create top and bottom layers.
- Place the bottom layer of rolls in a baking dish or on a serving platter. Pile the buffalo chicken generously onto the rolls.
- Sprinkle shredded cheddar cheese over the chicken.
- Broil the sliders for 2-3 minutes until the cheese is bubbly and golden, or cover and let melt in residual heat for 10 minutes.
- Top with the upper layer of rolls and drizzle with blue cheese dressing or ranch. Serve warm.
Notes
If using frozen chicken, add 1-2 hours to the cook time. For a milder heat, use half hot sauce and half ketchup, or add more butter. The hand mixer hack makes shredding chicken much faster. Leftover buffalo chicken can be frozen for up to 3 months or used in salads and tacos.
