A spicy, creamy, and budget-friendly buffalo chicken dip perfect for game day crowds. Made with rotisserie chicken, cream cheese, buffalo sauce, and blue cheese, this easy-to-make appetizer feeds an army and tastes even better the next day.
Ingredients
- 2 cups cooked chicken, shredded (rotisserie or grilled)
- 8 oz cream cheese, full-fat, softened to room temperature
- ½ cup buffalo sauce (e.g., Frank’s RedHot)
- ½ cup blue cheese dressing
- 1 cup shredded sharp cheddar cheese
- ½ cup blue cheese crumbles
- 2–3 stalks green onions, sliced (for garnish)
- Optional: ¼ cup ranch dressing
- Optional: Celery sticks, carrot sticks, pita chips, tortilla chips, or crusty bread for serving
Instructions
- Preheat oven to 350°F (175°C). If using a slow cooker, prepare to cook on low.
- In a large bowl, combine the softened cream cheese, buffalo sauce, and blue cheese dressing. Mix until smooth. If needed, microwave for 15-20 seconds to soften lumps.
- Stir in the shredded chicken until the mixture is thick and creamy.
- Transfer the mixture to a 9×13 baking dish (or slow cooker) and spread evenly.
- Sprinkle the shredded cheddar cheese and blue cheese crumbles over the top.
- Bake for 20-25 minutes until the cheese is melted and bubbly and edges are slightly golden. Alternatively, cook in a slow cooker on low for 2-3 hours, stirring occasionally.
- Remove from heat, sprinkle with sliced green onions, and serve immediately with celery, carrots, or sturdy chips/crackers.
Notes
Ensure cream cheese is fully softened to avoid lumps. This dip can be assembled the night before and refrigerated; add 5-10 minutes to baking time if starting cold. Do not freeze as dairy texture may become grainy. For a milder version, use mild buffalo sauce and ranch dressing instead of blue cheese dressing.
