Description

A ridiculously easy, hydrating, and naturally sweet summer drink made with fresh watermelon, mint, lime juice, and a touch of honey or agave syrup. Perfect for cooling off on hot days.


Ingredients

  • 4 cups cubed seedless watermelon (about 600g / 1.3 lbs)
  • ½ cup packed fresh mint leaves (about 15g)
  • 2 tablespoons fresh lime juice (about 30ml)
  • 1 cup water (240ml)
  • 12 teaspoons honey or agave syrup (optional)
  • Ice cubes for serving

Instructions

  1. Cut watermelon into chunks, removing the rind, aiming for about 4 cups cubed.
  2. Add watermelon chunks and fresh mint leaves to a blender. Pulse a few times, then blend on high for about 30 seconds until smooth with visible mint specs.
  3. Pour in fresh lime juice and water, add honey or agave syrup if using. Blend or stir to combine. Taste and adjust sweetness or water as needed.
  4. Optional: Strain the mixture through a fine mesh strainer into a pitcher for a smoother drink.
  5. Add ice cubes to glasses or pitcher. Pour agua fresca over ice and garnish with mint sprig or lime wedge. Serve immediately.

Notes

Use ripe watermelon for best sweetness. Avoid overblending mint to prevent bitterness. Adjust water to taste for desired consistency. Store in fridge up to 24 hours and stir before serving. Fresh basil can substitute mint for a different flavor. Add a pinch of sea salt to enhance flavors. Frozen watermelon cubes can be used for a slushy texture.
