Description
A simple, refreshing frozen cocktail made with just three main ingredients: frozen strawberries, dry prosecco, and lemon juice. This vibrant pink slushie is perfect for brunches, parties, or a relaxing evening.
Ingredients
- 2 cups (300g) frozen strawberries
- 1.5 cups (350ml) dry prosecco
- 1 tablespoon (15ml) fresh lemon juice
- 1–2 tablespoons (15-30ml) simple syrup or honey (optional, to taste)
- Fresh mint leaves for garnish
- Strawberry slices for garnish
Instructions
- If using fresh strawberries, wash, hull, and freeze them for at least 4 hours until rock hard. If using frozen strawberries, measure them out without thawing.
- Place the frozen strawberries and lemon juice into a high-speed blender. Add simple syrup or honey if using.
- Blend on high until the mixture is completely smooth and creamy, about 30 seconds to 1 minute. Scrape down sides if needed.
- With the blender running on low, slowly pour in the prosecco in a thin stream to preserve carbonation. Blend just until combined.
- Taste and adjust sweetness or tartness if necessary.
- Pour immediately into chilled glasses.
- Garnish with fresh mint leaves and a strawberry slice. Serve immediately with a straw.
Notes
Use dry (Brut) prosecco to avoid a cloying sweet taste. Ensure strawberries are frozen solid for a thick slushie texture. Do not over-blend after adding prosecco to maintain carbonation. Serve immediately as the slushie melts quickly. For a non-alcoholic version, substitute prosecco with white grape juice or sparkling apple cider.
