Description

  • ½ cup (50g) Funfetti Sprinkles
  • 1 cup (120g) Powdered Sugar (for glaze)
  • 12 tablespoons Milk (for glaze)
  • ½ teaspoon Vanilla Extract (for glaze)
  • Extra Sprinkles (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly spray with non-stick cooking spray.
  2. In a large mixing bowl, combine the dry cake mix, melted butter, eggs, and vegetable oil. Mix with a whisk or wooden spoon until the batter is completely smooth and resembles thick cookie dough.
  3. Stir in the ½ cup of funfetti sprinkles gently until distributed throughout the batter.
  4. Spread the batter evenly into the prepared pan, pressing it into the corners.
  5. Bake for 20-25 minutes. The edges should be golden brown and pulling away from the sides, but the center should still look slightly soft and underbaked.
  6. Remove from the oven and let cool in the pan for at least 15 minutes. Then, lift the bars out using the parchment paper and transfer to a wire rack to cool completely.
  7. Once completely cool, whisk together powdered sugar, milk, and vanilla extract to make the glaze. Adjust milk quantity for desired consistency.
  8. Pour the glaze over the cooled bars and spread to the edges. Immediately sprinkle extra sprinkles on top for decoration.
  9. Use a sharp knife to cut into 16 squares and serve.

Notes

Do not overbake the bars; they continue to cook on the hot pan after removal from the oven. Ensure the melted butter is not piping hot to avoid cooking the eggs. For clean cuts, wipe the knife between cuts or dip it in hot water. Store in an airtight container at room temperature for up to 4 days. Can be frozen for up to 3 months (glaze may crack upon thawing).
