  • 1 cup whole milk
  • 1/2 cup softened butter (for filling)
  • 3/4 cup dark brown sugar
  • 2 tablespoons ground cinnamon
  • 4 oz full-fat brick cream cheese, softened
  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. In a large mixing bowl, whisk together 1/2 cup melted butter, granulated sugar, eggs, and 1 teaspoon vanilla extract until smooth.
  3. Add flour, baking powder, salt, and milk to the wet ingredients. Whisk until just combined; do not overmix.
  4. Pour batter into the prepared pan and spread evenly.
  5. In a small bowl, mix the remaining 1/2 cup softened butter, brown sugar, and cinnamon to form a paste.
  6. Sprinkle half of the cinnamon mixture over the batter and press gently. Spread the remaining mixture on top.
  7. Use a knife to gently swirl the top layer into the batter to create ribbons.
  8. Bake for 30-35 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10-15 minutes.
  10. While cooling, whisk softened cream cheese, powdered sugar, remaining 1 teaspoon vanilla, and milk/cream until smooth.
  11. Drizzle the cream cheese icing over the warm cake and serve.

Notes

Do not overmix the batter to ensure a tender cake. Ensure eggs and cream cheese are at room temperature for smooth mixing. The cake is best served warm with the cool drizzle. Can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
