Greek Yogurt Berry Breakfast Parfait: 5-Minute Healthy Recipe

  • Author: Elena
  • Total Time: 10 minutes
  • Yield: 4 servings 1x

Description

A quick, protein-packed, and visually stunning breakfast parfait that takes only 5-10 minutes to assemble. This customizable recipe features layers of creamy Greek yogurt, fresh berries, and crunchy granola for a healthy start to your day.

Ingredients

Scale
  • 2 cups plain full-fat Greek yogurt
  • 23 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 medium banana, sliced (optional)
  • 1.5 cups granola
  • 1 tablespoon chia seeds (optional)
  • 1/4 cup nuts or seeds (sliced almonds, pecans, or pumpkin seeds)
  • Optional toppings: coconut flakes, dark chocolate chips, mint leaves

Instructions

  1. Wash berries thoroughly. Hull and slice strawberries into bite-sized pieces. Slice bananas into rounds. Pat all fruit dry with a paper towel to remove excess moisture and set aside in small bowls.
  2. In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Whisk until smooth and fully incorporated. Taste and adjust sweetness if desired.
  3. In a clear glass or mason jar, start with a layer of sweetened yogurt (about 1/4 cup).
  4. Add a layer of fruit (alternating berries and bananas or using just berries).
  5. Add a generous layer of granola.
  6. Repeat the layers: yogurt, fruit, granola. Finish with a final dollop of yogurt on top.
  7. Garnish with chia seeds, nuts, coconut flakes, chocolate chips, or mint leaves.
  8. Serve immediately for best texture, or cover and refrigerate for up to 2 days (keep granola separate if meal prepping for longer).

Notes

Pat fruit dry to prevent soggy yogurt. Keep granola separate until serving to maintain crunch. Can be meal prepped for up to 2 days. Do not freeze as yogurt texture will become grainy.
