A creamy, high-protein chicken salad made with Greek yogurt instead of mayo, featuring sweet grapes and crunchy celery. This budget-friendly meal prep recipe is ready in 15 minutes and keeps well for days.
Ingredients
- 3 cups shredded rotisserie chicken (or canned chicken)
- 1/2 cup plain Greek yogurt (full-fat or 2%)
- 1 cup red seedless grapes, halved
- 2 stalks celery, diced
- 1/4 cup red onion, finely diced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup walnuts or pecans, chopped
- Optional: 2 tablespoons fresh herbs (parsley or dill)
- Optional: 1/4 cup cranberries or raisins
Instructions
- Shred the chicken using two forks or a hand mixer. If using canned chicken, drain well and flake.
- Wash and halve the grapes. Dice the celery into small cubes and finely dice the red onion.
- Optional: Soak diced red onion in cold water for 5-10 minutes to reduce harshness, then drain and pat dry.
- In a large mixing bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper until smooth.
- Add the shredded chicken, grapes, celery, and onion to the dressing.
- Gently fold all ingredients together until the chicken is evenly coated, being careful not to crush the grapes.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
- Serve on bread, over greens, or with celery sticks.
Notes
For best results, use cold ingredients. If adding nuts, toast them in a dry skillet for 2-3 minutes before adding. This salad keeps for up to 4 days in the fridge. Do not freeze as the texture of the grapes and yogurt will suffer. If the salad becomes dry after chilling, stir in a teaspoon of yogurt or a splash of milk.
