  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup walnuts or pecans, chopped
  • Optional: 2 tablespoons fresh herbs (parsley or dill)
  • Optional: 1/4 cup cranberries or raisins

Instructions

  1. Shred the chicken using two forks or a hand mixer. If using canned chicken, drain well and flake.
  2. Wash and halve the grapes. Dice the celery into small cubes and finely dice the red onion.
  3. Optional: Soak diced red onion in cold water for 5-10 minutes to reduce harshness, then drain and pat dry.
  4. In a large mixing bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper until smooth.
  5. Add the shredded chicken, grapes, celery, and onion to the dressing.
  6. Gently fold all ingredients together until the chicken is evenly coated, being careful not to crush the grapes.
  7. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
  8. Serve on bread, over greens, or with celery sticks.

Notes

For best results, use cold ingredients. If adding nuts, toast them in a dry skillet for 2-3 minutes before adding. This salad keeps for up to 4 days in the fridge. Do not freeze as the texture of the grapes and yogurt will suffer. If the salad becomes dry after chilling, stir in a teaspoon of yogurt or a splash of milk.
