A simple and delicious homemade brown sugar boba milk tea recipe featuring chewy tapioca pearls, rich brown sugar syrup, strong brewed black tea, and creamy milk. Perfect for a sweet, comforting treat made easily at home.
Ingredients
- ½ cup (about 100g) tapioca pearls
- 1 cup (200g) dark brown sugar
- 1 cup (240ml) water (for cooking pearls and syrup)
- 1 cup (240ml) strong brewed black tea (Assam or Earl Grey recommended)
- 1 cup (240ml) milk (whole milk preferred, or any milk alternative like almond, oat, or coconut milk)
- Ice cubes (optional)
Instructions
- Bring 4 cups (1 liter) of water to a rolling boil in a medium saucepan.
- Add the tapioca pearls and stir gently to prevent sticking.
- When the pearls float to the surface, cover with a lid and reduce heat to medium-low.
- Simmer for 20 minutes, stirring occasionally to keep pearls from clumping.
- Turn off the heat and let the pearls sit, covered, for another 10 minutes.
- Drain the pearls through a strainer and rinse under cold water to stop the cooking process.
- In the same saucepan, combine 1 cup brown sugar and 1 cup water.
- Bring to a gentle boil over medium heat, stirring to dissolve the sugar.
- Simmer for about 5 minutes until syrup thickens slightly and turns a rich amber color.
- Transfer the drained tapioca pearls into the warm brown sugar syrup and stir to coat evenly.
- Brew black tea extra strong using 2 tea bags or 2 teaspoons loose leaf per cup; steep for at least 5 minutes, then remove tea bags or strain leaves. Chill if desired.
- In a large glass, spoon in a generous amount of brown sugar boba pearls with syrup.
- Add ice cubes if desired.
- Pour in the brewed tea, then top off with milk.
- Stir gently to mix before sipping.
