A quick, creamy, and delicious homemade energy drink made with lotus biscuits, coffee, and milk. It provides a caffeine boost with a toasty caramel flavor without the artificial ingredients or high cost of store-bought options.
Ingredients
- 1 cup cold brew or strong black coffee
- 1 cup milk (whole, oat, or almond)
- 1 cup ice cubes
- 3–4 Lotus Biscoff biscuits
- 1–2 tablespoons sweetener (maple syrup, simple syrup, or brown sugar)
- 1/2 teaspoon vanilla extract
- Optional: Whipped cream, extra crushed biscuit for garnish, pinch of cinnamon
Instructions
- Prep ingredients: Ensure coffee is cold (or cooled), measure sweetener, and break biscuits in half if necessary.
- Add coffee to the blender first to help blades spin freely.
- Add milk, lotus biscuits (or spread), sweetener, and vanilla extract to the blender.
- Pulse a few times to break up biscuits, then blend on high for 30-60 seconds until smooth and frothy.
- Add ice cubes and blend again for 15 seconds until the mixture is chilled and slushy.
- Taste and adjust sweetness or coffee strength if needed.
- Pour into a glass, top with whipped cream or extra crushed biscuits if desired, and serve immediately.
Notes
For best results, use cold brew or let hot coffee cool completely to avoid a watery taste. If you don’t have a blender, crush biscuits in a bag and stir into coffee, then pour over milk and ice. The drink separates over time, so drink immediately. Coffee concentrate can be stored in the fridge for up to 3 days.
