- 2 pounds large shrimp, peeled and deveined
- 2 tablespoons vegetable oil or avocado oil
- 1 tablespoon butter (optional)
- 6–8 cloves garlic, minced
- 1/3 cup honey
- 1/3 cup low-sodium soy sauce
- 1/4 cup chicken broth
- 1 tablespoon fresh ginger, grated
- 1 teaspoon toasted sesame oil
- 1 teaspoon cornstarch
- 1/2 teaspoon red pepper flakes (optional)
- 2 cups broccoli florets (optional)
- 1 cup snap peas or snow peas (optional)
- 1 large bell pepper, sliced (optional)
- 1/2 cup baby corn (optional)
- 2–3 stalks green onions, sliced (for garnish)
Instructions
- Thaw frozen shrimp if using by running cold water over them for 5-10 minutes. Pat them very dry with paper towels and season lightly with salt and pepper.
- In a small bowl, whisk together honey, soy sauce, chicken broth, grated ginger, sesame oil, cornstarch, and red pepper flakes until the cornstarch is dissolved. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp in a single layer (cook in batches if necessary) and sear for 1-2 minutes per side until pink and opaque. Remove shrimp from pan and set aside.
- Reduce heat to medium. Add minced garlic to the pan and sauté for 30-60 seconds until fragrant but not brown. Add hard vegetables like broccoli if using and stir-fry for 2-3 minutes.
- Stir the sauce mixture again and pour it into the pan. Stir constantly for 1-2 minutes until the sauce thickens and becomes glossy.
- Return the shrimp and tender vegetables to the pan. Toss to coat in the sauce and cook for 1 minute to heat through.
- Remove from heat. Stir in butter if using and toss with green onions. Serve immediately over steamed rice.
- Garnish with sesame seeds if desired.
Notes
Pat shrimp dry thoroughly to ensure proper searing. Do not overcook garlic as it burns easily. If sauce is too thin, simmer longer; if too thick, add a splash of water. Shrimp cook very quickly, so remove from heat as soon as they turn pink to avoid rubbery texture.
