Labor Day BBQ Pulled Pork Sliders with Tangy Slaw

Description

Tender, smoky pulled pork slow-cooked to perfection and served on slider buns with a crunchy, tangy slaw. Perfect for family gatherings and backyard cookouts.


Ingredients

  • 45 pounds pork shoulder (1.82.3 kg)
  • 1 large yellow onion, sliced (about 250g)
  • 4 cloves garlic, minced (about 1 tablespoon)
  • 1 ½ cups BBQ sauce (360 ml)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 2 tablespoons brown sugar (25g)
  • 2 teaspoons smoked paprika
  • Salt and pepper to taste
  • 1216 slider buns (brioche recommended)
  • For the Tangy Slaw:
  • 4 cups shredded green cabbage (about 300g)
  • 1 cup shredded carrots (about 100g)
  • ½ cup mayonnaise (120 ml)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 tablespoon honey (20g)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from pork shoulder if desired. Slice onion into thick rings and mince garlic.
  2. Mix smoked paprika, salt, and pepper in a small bowl and rub evenly over the pork shoulder.
  3. Place sliced onions at the bottom of a slow cooker. Set pork on top.
  4. Add minced garlic, apple cider vinegar, brown sugar, and half of the BBQ sauce over the pork.
  5. Cover and cook on low for 8 hours or until pork is tender and falls apart easily.
  6. While pork cooks, combine shredded cabbage and carrots in a large bowl.
  7. In a smaller bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  8. Pour dressing over veggies and toss to coat. Refrigerate until ready to serve.
  9. Remove pork from slow cooker and shred with two forks, discarding large fat or gristle pieces.
  10. Return shredded pork to slow cooker and stir in remaining BBQ sauce. Warm on low for 10-15 minutes.
  11. Slice slider buns and assemble sliders with pulled pork and tangy slaw. Serve immediately.

Notes

For best results, do not skip the slow cooking step. Save cooking liquid to add moisture if pork dries out. Make slaw a few hours ahead for better flavor. Use brioche or potato rolls to prevent soggy buns. Leftover pulled pork can be used in sandwiches, tacos, or nachos. To reduce sodium and fat, use low-sodium BBQ sauce and light mayonnaise.
