A simple, festive, and cool no-bake layered dessert featuring strawberries, blueberries, vanilla wafers, and whipped cream. Perfect for Labor Day celebrations and summer gatherings.
Ingredients
- 2 cups sliced strawberries (about 300g)
- 2 cups blueberries (about 300g)
- 3 cups crushed vanilla wafers (about 150g)
- 2 cups heavy whipping cream (480ml)
- 1/4 cup powdered sugar (30g)
- 1 teaspoon vanilla extract
- Fresh mint leaves (optional, for garnish)
Instructions
- Wash and dry strawberries and blueberries. Slice strawberries thinly.
- Crush vanilla wafers into coarse crumbs, leaving some small chunks for texture.
- Pour heavy whipping cream into a chilled large mixing bowl. Add powdered sugar and vanilla extract.
- Whip cream using an electric mixer or whisk on medium-high speed until soft peaks form.
- In a trifle bowl, layer one-third of the crushed vanilla wafers.
- Add a generous layer of sliced strawberries over the wafers.
- Spread a thick layer of whipped cream evenly over the strawberries.
- Scatter a layer of blueberries over the whipped cream.
- Add another layer of whipped cream on top, smoothing gently.
- Repeat the layers once more: crushed wafers, strawberries, whipped cream, blueberries, and finish with a final fluffy layer of whipped cream.
- Cover the trifle with plastic wrap and refrigerate for at least 2 hours or overnight.
- Before serving, garnish with fresh mint leaves if desired.
