Lemon Pepper Shrimp Skewers

  • Author: Elena
  • Total Time: 15-20 minutes
  • Yield: 4 servings 1x

Description

A quick and easy 15-minute weeknight meal featuring juicy shrimp marinated in lemon pepper seasoning and served with a rich garlic butter sauce. Perfect for busy evenings, this recipe is budget-friendly, kid-approved, and requires minimal cleanup.

Ingredients

Scale
  • 1.5 lbs large shrimp (frozen, peeled, deveined, thawed)
  • 2 tablespoons olive oil
  • Juice of 1 medium lemon (plus zest for garnish)
  • 2 tablespoons lemon pepper seasoning
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter (divided)
  • 1 tablespoon fresh parsley, chopped
  • Optional: Bell peppers, zucchini, red pepper flakes

Instructions

  1. Thaw frozen shrimp in cold water for 20 minutes, then pat completely dry with paper towels to ensure proper searing.
  2. In a large bowl, whisk together olive oil, lemon juice, lemon pepper seasoning, and minced garlic.
  3. Add shrimp to the marinade, tossing to coat evenly. Let sit for 10-15 minutes (do not exceed 30 minutes to avoid mushy texture).
  4. Thread shrimp onto skewers, alternating with vegetables if desired. Do not pack too tightly.
  5. Heat a large skillet or grill to medium-high heat. Add a little oil to the pan or grates.
  6. Cook shrimp skewers for 2-3 minutes per side until opaque, pink, and slightly charred.
  7. While shrimp cook, melt 2 tablespoons of butter in a small saucepan or microwave. Stir in remaining garlic and chopped parsley (and red pepper flakes if using).
  8. Serve shrimp immediately, drizzled with the warm garlic butter sauce and extra lemon juice if desired.

Notes

Do not overcrowd the pan; cook in batches if necessary to ensure a good sear. If using wooden skewers, soak them in water for 30 minutes before use to prevent burning. Shrimp cooks very quickly, so watch closely to avoid overcooking, which makes them rubbery. For best flavor, use fresh lemon juice and zest rather than bottled.
