A creamy, savory one-pan chicken dish made with sun-dried tomatoes and parmesan that is ready in 20 minutes and costs less than $15 for the whole family.

- 2 pounds boneless, skinless chicken thighs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes (packed in oil, drained)
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh basil, chopped
Instructions
- Pat chicken thighs dry with paper towels and season both sides generously with salt, pepper, Italian seasoning, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs in a single layer for 3-4 minutes per side until golden brown. Remove chicken to a plate and set aside.
- Reduce heat to medium. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1 minute until fragrant.
- Pour in chicken broth, scraping the bottom of the pan to release brown bits. Simmer for 1 minute.
- Stir in heavy cream and red pepper flakes. Simmer gently for 3-4 minutes until the sauce starts to thicken.
- Remove skillet from heat. Stir in grated Parmesan cheese until melted and smooth. Adjust seasoning if needed.
- Return chicken and any juices to the skillet. Spoon sauce over chicken and warm through for 1 minute.
- Garnish with fresh basil and serve immediately over pasta, rice, or with crusty bread.
Notes
Do not skip searing the chicken for better texture. Remove pan from heat before adding cheese to prevent graininess. If sauce is too thick, add splash of broth or milk. If too thin, simmer longer. This recipe is naturally gluten-free if using certified GF broth and seasonings.
