Description
A budget-friendly, easy-to-make banana bread that requires only one mixing bowl. This recipe uses pantry staples and ripe bananas to create a moist, tender loaf with pockets of melted chocolate chips.

- 3 large ripe bananas (about 1 ½ cups mashed)
- ¾ cup granulated sugar
- ⅓ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ to 1 cup chocolate chips (semi-sweet or milk)
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray, or line with parchment paper.
- In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth but with a few small chunks remaining.
- Add the sugar, vegetable oil, egg, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.
- Add the flour, baking soda, and salt to the wet mixture. Stir gently with a spatula or wooden spoon just until the flour disappears. Do not overmix.
- Gently fold in the chocolate chips and nuts (if using) until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with aluminum foil after 30 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
Notes
Use very ripe bananas for maximum sweetness and flavor. Do not overmix the batter once flour is added to avoid a dense texture. The bread can be stored at room temperature for 3-4 days or frozen for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend.
