  • 1/2 cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup (320g) raspberry jam
  • 3/4 cup (60g) sliced almonds, toasted
  • 1/4 cup (50g) brown sugar
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spread sliced almonds on a baking sheet and toast for 5 minutes until fragrant and lightly golden. Set aside to cool.
  2. In a medium bowl, combine flour, granulated sugar, and salt. Add cold cubed butter and cut into the dry ingredients using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized bits.
  3. Press about two-thirds of the shortbread mixture firmly into the bottom of a greased 9×9-inch baking pan. Bake for 15 minutes until edges start to turn golden.
  4. Spread raspberry jam evenly over the hot shortbread base, reaching close to the edges without pushing jam under the crust.
  5. In the same bowl, combine the remaining one-third of the shortbread mixture with brown sugar, ground cinnamon (if using), and toasted sliced almonds. Mix gently until evenly incorporated.
  6. Sprinkle the almond crumble evenly over the raspberry jam layer without pressing down.
  7. Bake at 350°F (175°C) for 25 to 30 minutes until the crumble topping is golden brown and jam is bubbly around the edges. Watch carefully to prevent burning.
  8. Cool bars completely in the pan on a wire rack for at least 1 hour before cutting into squares to allow the jam to set.
