- 1.5 pounds large shrimp (peeled and deveined)
- 4–5 cloves garlic (minced)
- 4 tablespoons unsalted butter (melted)
- 2 medium lemons (juice from one, slices from the other)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt (plus more to taste)
- 1/2 teaspoon freshly cracked black pepper
- 1 bunch asparagus (woody ends trimmed)
- 1 cup cherry tomatoes (halved)
- 1 medium red onion (sliced into thick wedges)
- Optional: Red pepper flakes, fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- If using frozen shrimp, thaw in cold water for 10 minutes, then pat completely dry with paper towels.
- Trim asparagus ends and slice red onion into wedges; halve cherry tomatoes.
- In a small bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, lemon zest, Italian seasoning, salt, and pepper.
- Line a large sheet pan with parchment paper.
- Spread asparagus and red onion on one half of the pan and shrimp on the other.
- Drizzle the lemon garlic sauce over everything and toss with tongs to coat evenly.
- Roast for 12-15 minutes until shrimp are pink and opaque and veggies are tender-crisp.
- Serve immediately, garnished with lemon slices and fresh parsley if desired.
Notes
Do not overcrowd the pan to ensure shrimp roast rather than steam. Pat shrimp dry before cooking for better texture. Shrimp are done when curled into a ‘C’ shape; ‘O’ shape indicates overcooking. Can be made in an air fryer at 400°F for 6-8 minutes.
