Small-Batch Snickerdoodles: 5-Ingredient Easy Recipe

  • Author: Elena
  • Total Time: 15 minutes
  • Yield: 2 servings 1x

Description

A quick, 5-ingredient recipe for soft, chewy snickerdoodles that makes just two or three cookies. Perfect for late-night cravings, this small-batch treat requires only pantry staples and takes about 15 minutes from start to finish.

Ingredients

Scale
  • 2 tablespoons (30g) unsalted butter, softened
  • 3 tablespoons (35g) granulated sugar (for dough)
  • 1 large egg (use approx. 1 tablespoon)
  • ¼ cup (30g) all-purpose flour
  • ¼ teaspoon baking powder
  • A tiny pinch of salt
  • 2 tablespoons (25g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Soften the butter by letting it sit at room temperature for 15-20 minutes or microwaving on low for 10 seconds until soft but not melted.
  2. In a small bowl, combine the softened butter and 3 tablespoons of granulated sugar. Mash and mix with a fork until the mixture resembles wet sand.
  3. Whisk one egg and use approximately 1 tablespoon. Add it to the butter-sugar mixture and stir until combined and cohesive.
  4. Add the flour, baking powder, and salt to the wet ingredients. Stir with a spoon until just combined; do not overmix.
  5. In a small plate or shallow dish, mix 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon to create the coating.
  6. Scoop out two portions of dough and roll them into balls about 1.5 inches in diameter. Roll each ball in the cinnamon sugar mixture to coat fully.
  7. Place the coated dough balls on a microwave-safe plate or small baking sheet.
  8. Option A (Microwave): Microwave on high for 45-60 seconds. Let sit for 1 minute to finish cooking.
  9. Option B (Oven): Preheat oven to 350°F (175°C). Bake for 8-10 minutes until edges are set but centers are soft. Cool on the plate for 5 minutes.
  10. Serve immediately while warm for the best texture.

Notes

Ensure butter is softened but not melted to prevent spreading. Do not overbake as cookies continue to cook after removal. Use fresh cinnamon for best flavor. Dough can be made ahead and refrigerated for up to 3 days.
