Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, cream together ¾ cup softened butter and ½ cup granulated sugar until light and fluffy (2-3 minutes with a mixer).
  3. Add 1 ½ cups flour and ¼ teaspoon salt. Mix just until combined; do not overwork.
  4. Press dough evenly into the bottom of the prepared pan, packing corners well.
  5. Bake crust for 18-20 minutes until lightly golden around edges but still soft in the center.
  6. While crust bakes, whisk together 3 eggs, ½ cup granulated sugar, ⅔ cup fresh lemon juice, 1 tablespoon lemon zest, 1 teaspoon baking powder, and a pinch of salt until smooth and frothy.
