Soft Snickerdoodle Cookies

  • Author: Elena
  • Total Time: 25-27 minutes
  • Yield: 24 cookies 1x

Description

Soft snickerdoodle cookies with a pillowy center and crackly cinnamon sugar crust, perfect for any occasion and easy to make repeatedly.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¾ cups (350g) all-purpose flour, sifted
  • 2 teaspoons cream of tartar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Cinnamon sugar topping:
  • ⅓ cup (65g) granulated sugar
  • 1 tablespoon cinnamon

Instructions

  1. Cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-5 minutes.
  2. Add eggs one at a time, beating well after each addition, then stir in vanilla extract until smooth.
  3. In a separate bowl, whisk together sifted all-purpose flour, cream of tartar, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture, mixing on low speed just until combined. Do not overmix.
  5. In a small bowl, mix granulated sugar and cinnamon to prepare the cinnamon sugar topping.
  6. Scoop dough balls about 1.5 inches in diameter using a cookie scoop or tablespoon. Roll each ball generously in the cinnamon sugar topping.
  7. Place coated dough balls on a parchment-lined baking sheet about 2 inches apart.
  8. Bake in a preheated 375°F (190°C) oven for 10-12 minutes until edges look set but centers remain soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use real unsalted butter for best results. Room temperature ingredients help achieve a tender texture. Do not overbake to keep centers soft. Dough freezes well; bake from frozen adding a few extra minutes. Cream of tartar is essential for classic tang and chewiness. For a twist, add a pinch of nutmeg or mini chocolate chips.
