Description

A refreshing, tart, and spicy homemade mocktail made with dried hibiscus flowers, fresh ginger, lime, and sparkling water. It offers the complexity of a craft cocktail with zero alcohol and is perfect for summer gatherings.


Ingredients

  • 1 cup (80g) dried hibiscus flowers
  • 1 large knob (approx. 3 inches / 60g) fresh ginger root, peeled and sliced
  • 4 cups (960ml) water
  • 1/2 cup (120ml) fresh lime juice (about 34 limes)
  • 1/2 to 3/4 cup (100-150g) sweetener (agave nectar, simple syrup, or honey)
  • 46 cups (11.5 liters) sparkling water
  • Ice
  • Garnishes: fresh mint leaves, lime wheels, extra ginger slices, salt or Tajín for rimming

Instructions

  1. Wash and slice the fresh ginger into thin coins or rough chunks, optionally smashing them slightly to release oils.
  2. Combine water, dried hibiscus flowers, and sliced ginger in a medium saucepan.
  3. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 10-15 minutes until the liquid is deep red.
  4. Remove from heat and stir in sweetener until completely dissolved.
  5. Let the mixture cool to room temperature (approx. 10-15 minutes).
  6. Strain the liquid through a fine-mesh strainer into a large pitcher, discarding the solids.
  7. Stir in the fresh lime juice and adjust sweetness or tartness to taste.
  8. Fill glasses with ice and pour the hibiscus-ginger base over the ice (filling 1/3 to 1/2 full).
  9. Top with sparkling water (ratio of 1 part base to 2 parts sparkling water) and stir gently.
  10. Garnish with lime wheels, mint, and ginger slices. Serve immediately.

Notes

For best results, use loose leaf hibiscus flowers for vibrant color and flavor. Ensure sparkling water is very cold to maintain fizz. The hibiscus-ginger base can be stored in the fridge for up to 5 days without the sparkling water. Do not mix sparkling water in advance as it will go flat.
