  • 1 cup fresh strawberries, hulled and pureed

  • 2 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons warm water (for blooming matcha)

Instructions

  1. Hull and rinse strawberries, then blend into a smooth puree. Strain through a fine-mesh sieve to remove seeds, reserving 2 tablespoons for layering.
  2. Chop white chocolate and melt in a microwave-safe bowl in 15-second intervals, stirring until smooth. Let cool slightly.
  3. Whisk matcha powder with warm water to create a smooth, lump-free paste.
  4. In a large bowl, whip cold heavy cream, confectioners’ sugar, vanilla, and salt until stiff peaks form.
  5. Gently fold the melted white chocolate into the whipped cream, then fold in the matcha paste until uniform.
  6. Layer the mousse and reserved strawberry puree in serving glasses, finishing with a top layer of mousse.
  7. Chill in the refrigerator for at least 2 hours or overnight to set.
  8. Garnish with white chocolate shavings and fresh strawberries before serving.

Notes

Ensure all equipment and cream are very cold to help the cream whip properly. Do not skip straining the strawberry puree to avoid seeds. Use high-quality ceremonial grade matcha for the best flavor. The dessert is best made ahead and chilled overnight.
